Swiss Chard and Chicken Sausage Hash
A low-carb hash with onions, swiss chard, chicken sausage, mild spices and tomato topped with eggs. Nutrition (per serving) Carbs: 8 g Fiber: 3 g Net carbs: 5 g Calories: 230 Cal Ingredients (for the entire dish) - 4 eggs - 3 chicken sausages - 1 chopped onion - 10 oz. of swiss chard - 1-2 cloves of garlic finely chopped - 1 medium chopped tomato - 1/3 cup of pasta sauce - 1 teaspoon dried oregano - 1 teaspoon dried rosemary - 1 tablespoon coconut oil - 1 teaspoon salt and pepper Instructions 1) Heat the oil and saute the garlic for 1-2 min, then add onions. Cook for ~3-5 minutes. 2) Add the swiss chard and let it wilt by cooking for 5-8 minutes. 3) Add the chopped tomatoes and pasta sauce. Cook for 3-5 minutes. 4) Add dried herbs, salt and pepper. 5) Chop the chicken sausage and saute lightly in another pan for 3-5 minutes. 6) Combine the sausage with the vegetables and pour in a greased baking pan. 7) Crack and place 4 eggs on top of the chicken sausage and vegetable hash. 8) Broil on high for 5-8 minutes until the egg whites are cooked. Yellows should be runny. |
