Slow-Cooked Chipotle Lime Chicken
A tangy, spicy Mexican take on a low carb version of Chipotle Chicken with beans and vegetables. Nutrition (per serving) Carbs: 27g Fiber: 14.3g Net carbs: 12.7 g Calories: 346 Cal Ingredients (entire dish, 10-12 servings) - 4 lbs. of chicken - 1.5 cups of chopped carrots - 1 large onion sliced - 1.5 cups of chopped celery - 2.5 cups of 16 bean mix (can substitute any kind of bean or lentil) - 2 tablespoons cajun seasoning - salt and pepper FOR THE SAUCE - 2 medium tomatoes - juice of 4 large limes - 1.5 tablespoons of chipotle peppers - 2 teaspoons of adobo sauce - 1/2 a bunch of cilantro (save other half for garnishing) - 1 tablespoon of minced garlic Instructions 1) For the sauce, blend together tomatoes, chipotle peppers, lime juice, adobo sauce, cilantro and garlic. Save for later. 2) Slice chicken in bite sized pieces and season with salt and pepper. 3) Chop all vegetables. 4) Wash the beans. 5) Mix together the chopped chicken, vegetables, beans and cajun seasoning in a 6 quart electric slow cooker. 6) Add the sauce on top of the chicken and vegetable mixture. 7) Cook for 4 hours on high heat or 8 hours on low heat. 8) Garnish with remaining chopped cilantro. |
