Rice-less Chicken Jambalaya
A rice-free take on the spicy Creole dish with all the flavor, but none of the carbs. Nutrition (per serving) Carbs: 15 g Fiber: 6.5 g Net carbs: 8 g Calories: 374 Cal (A similarly-sized homemade jambalaya 22g of carbs) Ingredients (per entire dish) - 1/3 cauliflower head - 1 tablespoon bean/lentil mix - ½ skinless, boneless chicken breast (86g) - half of a small bell pepper - 1/6 of a medium onion - 2 tablespoons of coconut oil - 1 teaspoon cumin - 1 tablespoon of Cajun seasoning - salt to taste - hot sauce to taste Instructions 1) Dice the vegetables and saute in 1 tablespoon of coconut oil. 2) Boil the beans in water until tender. 3) Saute chicken breast in 1 tablespoon of coconut oil. 4) Roast cumin for 3-4 min on medium in a nonstick pan. 5) Mix all the above and add roasted cumin and cajun seasoning. |
