Low-Carb Greek Pasta
A very refreshing take on Greek salad, with strong flavors of green olives and feta cheese Nutrition (per serving) Carbs: 23 g Fiber: 10 g Net carbs: 13 g Calories: 345 Cal Ingredients (per serving) -1 lb zucchini -2 medium tomatoes -3 oz crumbled feta cheese -1 oz green olives -3 tablespoons olive oil -3 tablespoons lemon juice -3 tablespoons balsamic vinegar Instructions 1) Using a spiral vegetable slicer (such as the ones shown here), slice the zucchini into strands with the thickness of angel hair pasta. 2) Dice the tomatoes, and add to the sliced zucchini 3) Add the olives and feta cheese 4) Season with olive oil, lemon juice and balsamic vinegar 5) Serve cold |
