Ground Turkey Low-Carb Pasta
An extremely healthy and delicious alternative for people who can't live without pasta. Nutrition (per serving) Carbs: 27 g Fiber: 4 g Net carbs: 23 g Calories: 610 Cal Ingredients (per serving) -1 lb zucchini -0.5 lb lean ground turkey -0.5 cup tomato pasta sauce (any of your choice, as long as it has less tan 14g of carbs per serving) -1/3 cup shredded cheese -1 tablespoon cumin seeds Instructions 1) Using a spiral vegetable slicer (such as the ones shown here), slice the zucchini into strands with the thickness of angel hair pasta. Place in an oven-safe bowl 2) In a small saucepan sprayed with vegetable oil, sauté the cumin seeds on medium heat for 5 minutes. 3) Mix the cumin seeds with the ground turkey. 4) In a large shallow saucepan sprayed with vegetable oil, sauté the seasoned ground turkey on medium heat, using a wooden spoon frequently to separate the pieces of turkey to prevent them from sticking together. Cook the turkey thoroughly 5) Toss the ground turkey and the sliced zucchini, add the pasta sauce, and apply a layer of shredded cheese on top 6) Place in the oven at 350 F for 20 minutes. The zucchini should soften up, but should remain al dente 7) Broil on high for 3 minutes in order to toast the cheese on top |
